About this tea season: We only harvest spring tea Longjing, and then keep it in professional cold storage in China to preserve freshness. Grade B and Grade A tea are shipped to Amazon Warehouse every month. Grade S and Grade X are shipped directly from China to ensure maximum freshness. Taste specialty: Aroma: Longjing green tea has a strong aroma of fried bean incense (as described in Chinese) and smells fresh. Tea soup: It is smooth and thick. Taste: The tea has a distinct and sweet flavor, with only a slight green tea bitterness and very little astringency. After drinking, you can still feel the sweet and fresh tea taste lingering in your mouth. (Higher grades taste better and the aftertaste lasts longer.) Be careful: Do not use too much tea or steep it for too long, as it will become very bitter. We have tested that if you use 5g of tea with 100ml of water (about a 1:20 ratio), brew with 100°C water, and steep for more than 15 minutes, the tea will be extremely bitter and hard to drink. (Perhaps the only one-star review is due to this reason.) How to store: Keep the tea dry and away from sunlight. It is recommended to store it in the refrigerator — around -18°C would be ideal. After brewing, the flavor is relatively rich, with a Roasted Bean aroma. The bluish-green Longjing This type of Longjing has a relatively bluish-green color. After brewing, the flavor is not as rich, and it has a notably Grassy aroma, which is distinctly different from our Longjing. Brewing Tips: Gaiwan Brewing (Kung Fu Tea): Use 4–5g of tea with 100–120ml of water per steep. Water temperature: 85–90°C (185–194°F). For the first to third steeps, soak for about 5 seconds each time. From the fourth steep onward, soak for 8–10 seconds each time. The tea can be brewed about 6 times. Simple Cup Brewing: Use 3g of tea with 300–350ml of water (about a 1:100 ratio). Water temperature: 90°C (194°F). Soak for 1 minute, then you can start tasting. If you prefer a stronger flavor, wait an additional 2–3 minutes.
