Our Products Located in the Sierra de Francia, more than l000 meters in elevation in the heart of a National Park declared a Biosphere Reserve by UNESCO, this small village has a great microclimate for our products to dry and age naturally. OUR STORY Fermín was born in 1956 as a result of the efforts of Fermín Martín and his wife, Victoriana Gómez. In the years prior to the creation of the company, they gathered the traditional knowledge for upbringing and curing the best Iberico pigs in La Alberca, which has been practiced for centuries. After years of dedication, they transformed an activity that was basically done for family survival into an industry that currently employs more than 100 people. At present, it is Martín’s children, Santiago and Francisca, who run the company, maintaining the same principles that made Fermín a unique and artesanal project from day one. Throughout the past 60 years, Fermín has been dedicated to continue the traditional production of Iberico products and their commercialization throughout the world. We control the entire production process at our plants in La Alberca Est. 23 (Salamanca), and Tamames Est. 27 (22km from La Alberca), represented by the magical landscapes that surround us. Fermín is present in more than 20 countries. We are very proud to say that we were the first iberico brand to be found in homes and restaurants of United States, Japan, Canada, Singapore and China. OUR LINES 100% Acorn-Fed Organic The production of our organic Iberico products are carried out on a separate line from the rest of traditional Iberico products. Our manufacturing process has zero residue of genetically modified organisms. Organic Fermin Iberico is free of artificial additives/preservatives. Tasting notes: Bold color, intense aroma, pungent buttery flavor and very rich on the palate. Just one piece will create a memorable experience. Remember, how your food is grown or raised can have a major impact on our lives as well as the environment. 100% Iberico Acorn-Fed Made from a 100% Iberico Free Range pig. During the “Montanera” season (from October through February), this pig doubles its weight eating acorns and grass. Making it the finest and most luxurious pork meat in the world. Tasting notes: Bold color, intense aroma, pungent buttery flavor and very rich on the palate. Just one piece will create a memorable experience. 50% Iberico Grain-Fed These products are the result of a cross breed between 100% Ibérico with the 100% Duroc pig to offer a more affordable, lower fat content pig for everyday use. Fed on a diet of grains, these products have a strong visual fat marbling and subtle flavor that are a result of Fermín’s generations of practiced artisan production methods. Tasting notes: Lower fat content with great marbling. Outstanding flavor but the lightest among all categories. Vibrant color, but not as intense as other categories. Authentic Serrano We are proud to offer you the authentic Serrano. Our high quality Fermín Serrano products are made from pigs born, raised and processed in Spain. Our pigs are older, heavier and fattier than the pigs from North Europe. . This means more complex and flavorful product to you. Here in La Alberca, Spain, a Natural Reserve declared a World Heritage, we only use only artisanal methods. Because we are committed to maintain our quality and traditions, we also extend the natural curing process. All our boneless pieces are cured for a minimum of 15 and our bone-in for a minimum of 18 months. For all of these reasons we like to call it Fermín Ham. Tasting notes: Great color, aroma and tasty on the palate. Perfect to enjoy by itself, on a charcuterie board, tapa or to add into any breakfast, lunch or dinner recipe. Pairs great with a Spanish beer, Albariño Wine, Jerez or a Tempranillo from Ribera del Duero or Rioja regions (including a Rioja Blanco).
