Whip using countertop mixer with whisk attachment for 9-12 minutes until there are stiff peaks. Scrape bowl as needed, do not overbeat. Stop at stiff peaks. Directions: Follow ABCs of meringue above. Gradually add 16 oz (3 cups) of powdered sugar. Mix on low just until incorporated (this prevents air bubbles), then use a spoon to continue mixing.
