Inspired from these factories he decided to start his own business of vinegar production. He started collecting wine from local producers throughout the Peloponnese. He used large wooden barrels for wine storage and vinegar production while he achieved the fermentation of the wine in beech barrels according to the combination of the New Orleans and the German methods.
