Whereas other craft bitters might make six or eight cocktails per ounce, ours give you 20 - 40! Also, our bitters don’t contain a shred of artificial coloring or any thickening agents. Our Small Batch Process We make our naturally gluten-free and grain-free bitters the old-school way: slowly. It all starts with hand-picked, organic, wild-crafted, therapeutic-grade botanicals (roots, leaves, fruit, and sometimes seeds). These whole botanicals are immersed in organic, non-GMO, over-proof cane spirits and steeped for weeks, getting more flavorful and complex until their goodness is infused in the liquid. This process happens at room temperature so the most delicate flavors aren't damaged by heat. The botanicals are then strained out, and we're left with gorgeous tinctures. Every herb we use is tinctured separately, so the flavors come through clearly and we have ultimate control over our blends. "Bitters" happen when those tinctures are combined in precise proportions in small batches. We keep processing to a minimum by allowing our bitters to settle and then gravity filtering them to give you our distinct clear product. Because we don't use fining agents or invasive procedures, some botanical evidence may be found in the bottle. A small amount of non-GMO raw cane sugar is added so your palate can taste everything that's there to round out the flavor, as well as Portland water to make all those flavors bloom. We put our bitters in amber glass bottles with dropper tops, because quality shouldn't be shaken around. It should be applied with care.
