Product description Fonio flour is naturally gluten free and vegan made entirely from the fonio grain. Because this is a single-ingredient gluten free flour, it will bake much like other gluten free flours you might be familiar with such as almond flour, rice flour, coconut flour and lupin flour. Use fonio flour for frying, muffins, pancakes, cornbread, and cakes. Fonio is a tiny nutrient dense grain native to West Africa. Grown in an area of land stretching from coastal Senegal to the northern tip of Cameroon, fonio is a staple crop in the sub-Saharan savanna climate of Africa and has played an important role in the region’s cuisine for generations. Fonio has a deep root system which thrives in the poor, dry soil. With a unique sustainability, this fast-growing grain is drought and climate resistant. We selectively source production partners who share our vision. They work with women-run cooperatives, farmers, and NGO’s (organizations run by citizens independent of government involvement) on-site to source fonio and promote regenerative farming practices. They commit to donating 1% of their sales (not their profits) to funds that provide quality of life services like electricity, water, and public gathering places in the villages that grow our fonio. Gluten Free Banana Bread This Gluten free fonio banana bread is light and airy. The fonio flour adds a delectable sweet nutty flavor. 1. Preheat oven to 350 degrees. 2. Lightly grease, or line with parchment paper, a 9x5" loaf pan. 3. In a large bowl combine the flours, rolled oats, baking powder, salt and cinnamon. Whisk until well combined. 4. In a separate bowl, mash the bananas. Then add in eggs, oil/butter, vanilla, and sugars. Whisk until well combined. 5. Pour the wet ingredients into the dry, stir together. Do not over mix. 6. Pour batter into prepared loaf pan. Bake at 350 for 50-60 minutes; until toothpick inserted into center of loaf comes out clean. 7. Let cool on a wire rack for 20-30 minutes. Delicious when served warm with butter! Enjoy!
