Almost 77,000 saffron flowers are hand-picked one by one by hardworking farmers to make a pound of saffron spice. Fair Trade Harvesting saffron is not an easy process. Farmers have to harvest the saffron once a year in an almost two weeks period. They start early in the dawn and hand-pick each saffron flowers till a little after sunrise.
