Aged in Centuries Old Casks The heart of our production is a collection of 600 casks dating back to the 1600s, from where the purest extractions that create the unmistakable aroma of our balsamics are collected. Casks provide an intensity of wood essences and aromas, and the older the cask, the more complex the vinegar.
