Opening the coffee trees up to sunlight and aeration increases development of the coffee cherries, their ripening, and the natural production of sugar. Many coffee farmers use observation of the change of color from green to red to determine when to pick coffee cherries. We take a scientific approach, testing the coffee cherries for pH level, sugar concentration and titratable acid before handpicking them at their optimum maturity.
